Scope of this Position
Position will be responsible for supervising/managing/overseeing the following departments: Culinary Team
Requires a minimum of 5 year(s) of supervisory experience.
Requires a minimum of 5 year(s) of experience.
This position reports to: Director of Food & Beverage
Must have experience at properties of similar size and quality.
Position will be required to work a varied schedule that may include evenings, nights, and week-ends.
Job Requirements
Must be a citizen of this country or possess a valid work permit.
Technical Requirements:
Excellent knowledge of current culinary trends.
Practical creativity to provide innovative entrees while meeting profit goals of property.
Teach all employees the importance of consistency in preparation and presentation.
Thorough knowledge of food handling and preparation techniques.
Utilize a hands-on approach to training and developing kitchen staff.
Excellent experience in production techniques of large banquets.
Ability to instill safety and sanitation habits in all employees.
Previous responsibility for food purchasing, including negotiating prices.
Prior experience standardizing recipes, plating instructions, and costing.
Stay current on new products that can improve quality and/or lower costs.
Current knowledge of regional and national trends in F&B to keep menus current.
Utilize vendors, trade associations, and peer groups to stay current on equipment technology to build sales and/or improve operations.
Consistently check line plating and quality.
Strong inventory control skills.
Enjoy mingling with guests.
Experience developing outlet, catering and banquet menus that sell.
Work closely with F&B Director to develop imaginative menus.
Fine dining experience.
Experience at 4-5 star level properties.
2 or 4 year formal culinary degree, or formal apprenticeship highly desired.

What a Great Stopover!
What a great stopover! We stayed at The Shores on July 21 - July 23, 2009, enroute to Cape Canaveral. There we boarded the Disney cruise ship, Wonder. We enjoyed ou stay so much, that it was hard for us to leave the property. We usually stay in Destin, but The Shores will now top our list for a stop over. No one in our party had been to Daytona Beach, so the whole experience was different. Love the hotel, lounge, bar, spa & restaurant, the town, the beach and the ocean. We will be back, again soon. Fantastic Resort
Stayed at The Shores for 4 nights 7/29/09 thru 8/2/09. Absolutely fantastic. Rooms were spotless, as was the entire Resort. Staff was excellent and friendly. Common areas were every nice. Food was excellent from all three restaurants. Most comfortable beds I every slept in. Used the fitness center all four days, and it was great to see they had free weights as well as the standard equipment. I will be back time and time again. I honestly would not change a single thing. ALL WAS GREAT
I COULDN'T FIND ANYTHING WRONG WITH THIS HOTEL. AND I TRIED. THE ROOM WAS CLEAN, SPACIOUS AND COMFORTABLE. CHECK IN WAS A BREEZE. HELPED FIND RESTRAUNTS AND NAVIGATE US AROUND TOWN. BEAUTIFUL HOTEL FIRE PITS ARE GREAT AT NIGHT GAVE US SOMETHING TO DO WITH OUR CHILDREN WITHOUT GOING OUT OF THE HOTEL. YOU WOULD NOT REGRET A STAY AT THIS HOTEL. Posted by DANA EDWARDS
