Under the direction of the General Manager and Director for Culinary Operations, assumes day-to-day responsibility for food operations within the unit(s), including preparation, presentation and budgeting. Oversees all aspects of food production, catering, and special events preparation. Responsible for maintaining sanitation standards in compliance with city and state laws, Harvard Environmental Health and Safety regulations, and HACCP policies. Supervises and trains culinary staff. Aids in recipe writing and seasonal menu development. Utilizes and maintains a computerized food program (FoodPro). Monitors budgeted food and labor costs and accurate weekly inventory. Conducts daily meetings with culinary staff. Provides appropriate progressive discipline. Assists and leads in executing departmental goals and objectives, in an independent and energetic manner. Assures compliance with bargaining unit agreement. Complies with State of Massachusetts and Dining Services' "Food Employee Illness Policy". Works to meet the mission and core values of Harvard University Dining Services(HUDS) with enthusiasm and a spirit of cooperation. Represents HUDS to students, faculty, staff, and guests in a positive and professional manner. Carries out all duties and responsibilities in accordance with HUDS standards. Supports the needs of a diverse work environment. Performs other duties as assigned.
Job Requirements
Must be a citizen of this country or possess a valid work permit.
BASIC QUALIFICATIONS
Minimum of five years progressive culinary management and experience in developing a quality food program in a collegiate residential and/or restaurant environment.
ADDITIONAL QUALIFICATIONS
Culinary degree required. ServSafe certification preferred (must be obtained within one year). Excellent problem solving skills. Proven leadership and interpersonal skills. Experience with Microsoft Office. Working knowledge of Kronos timekeeping preferred. Excellent communication (written and oral) skills. Physical Demands: Continuous walking, bending, lifting, push/pulling, and handling. Frequent standing, squatting, reaching and manual dexterity. Occasional sitting and climbing.
