Scope of this Position
THE RESORT
Wild Dunes Resort is located on the northern tip of the Isle of Palms, a barrier island off the coast of South Carolina and just 30 minutes from the charm and grace of historic Charleston.
This 1600 acre oceanfront paradise features championship golf, nationally ranked tennis, one of the nation’s top-ranked family recreation programs, extensive meeting facilities, over 2 miles of pristine beach, and four outstanding Food and Beverage outlets and restaurants.
THE BUSINESS
For more than 35 years, Lowe Enterprises (a privately held Los Angeles-based entity) has planned, developed, and operated luxury resorts and residential communities across the United States such as the Resort at Squaw Creek, The Reserve, SunRiver Resort, and Wild Dunes Resort.
As part of the Lowe Hospitality Group, Destination Hotels & Resorts will manage the operations of Wild Dunes Resort as well as The Village, Property Management and IOPVRBO program.
Widely recognized as one of the most accomplished resort management companies in America, Destination Hotels & Resorts currently operates 30 independent, luxury and upscale hotels, resorts and golf clubs across the nation.
The Director of Food & Beverage is an Executive Committee position responsible for coordinating, supervising and directing all property food and beverage operations, while maintaining a profitable F&B department and high quality products and service levels.
As an additional note, although the F&B outlets at the two golf courses are managed by another operational department, their culinary direction and production are under the oversight of F&B.
The Director of Food & Beverage is expected to implement creative ideas to promote business; maintain revenue and payroll budgets; and meet budgeted productivity while keeping quality consistent with 4-Diamond standards.
This position will be responsible for overseeing the F&B outlets, Culinary, and Banquets/ Catering/ Conference Services operations while working in conjunction with the Purchasing, Sales, and other resort business units.
The F&B Director will also continually exemplify the attributes of the property leadership commensurate with the culture of the property and company while directing the division through a hands-on, open-door leadership style.
RESPONSIBILITIES:
Attaining budgeted revenue and net operating income of all F&B departments as well as contribute to overall NOI
Stewarding the resort commitment towards excellence in guest service and relationships
Supporting all food and beverage revenue centers within the resort.
Controlling all cost centers via a checkbook system of purchasing.
Assure product quality and consistency is maintained.
Oversee all hiring and training procedures.
Promote inter-company business relations…share best practices.
Weekly communication with the Managing Director and Director of Operations and collaborate with other divisions/leaders.
Perform coaching, training and development with direct reports and insure the same occurs throughout the F&B discipline..
Assure that the budgeting process is performed accurately and efficiently.
Promote creativity and innovation with the staff.
Support business strategies which are aligned with Destination Hotels & Resorts overall mission, vision, values and strategies.
Work closely the Director of Marketing Communications to create marketing strategies and develop promotional campaigns
Support human resource activities within F&B and across the company.
SCOPE:
Oversee Wild Dunes Resort food and beverage operations generating approximately $9.5 million dollars in revenue.
Maximize net operating income and owner’s equity through sales generation and cost control procedures.
Responsible for 6 direct reports and ~150 employees.
On a regular basis, examine outlet hours of operations and adjust as appropriate to demand factors.
POSITION IN ORGANIZATIONAL CHART OF THE COMPANY
The Wild Dunes Resort Director of Food and Beverage reports to the Director of Operations.
ACTIVITIES
Provide support and guidance in each revenue center to achieve or exceed budgeted revenue and net operating income goals.
Develop and implement action items to achieve revenue goals.
Ensure labor and expense guidelines are adhered to in order to maintain budgeted expenses and meet/exceed service and resort standards.
Establish and enforce property specific Standard Operating Procedures.
Institute and monitor service and/or product upgrades in order to maintain the Company’s competitive edge.
Meet with managers (one on ones) and associates (focus groups, staff meetings) to evaluate their goals, objectives and potential.
Develop a coaching relationship with all direct reports.
Maintain training and development plans to assist managers in attaining their professional goals as well as the Company.
Be bold and innovative in approaching our business. Take well thought out, calculated risks.
Distinguish Wild Dunes as a cutting edge, resort operation within our competitive set and DH&R.

Job Requirements
Must be a citizen of this country or possess a valid work permit.
QUALIFICATIONS
Must have 4 star background, knowledge and ability to implement such standards in a cross-over environment, family-friendly during peak summer season and largely adult member/resident community in the fall and spring seasons.
Must have experience in delivering both value and distrinctive branding propositions through menu design/redesign, staffing, training, and operational controls
Must have experience in the process of creating and implementing new concepts in a seasonal resort environment.
Previous resort, hotel or multi-unit restaurants and re-concepting experience preferred.
Must have proven track record building sales, via promotional activities, up-selling techniques and sound marketing.
Must have proven leadership skills, teambuilding and developing star performers.
Must have multiple years of progressive combined experience and proven leadership in a resort, hotel food and beverage department and/or in free-standing restaurants.
Must have knowledge of health department rules and regulations, liquor laws and regulations.
Must have complete understanding of the budgeting and forecasting process.
Capable of analyzing business levels and scheduling appropriately.
Must be proficient in Microsoft applications (Excel/Word/Outlook).
Experience with Delphi and Springer Miller Systems preferred.
Must be able to speak, hear, understand, read, and write the English language
Must have a strong customer service aptitude.
Must have excellent verbal and written communication skills
Must possess well developed leadership skills
Demonstrated track record of implementing and upholding service standards
Demonstrated track record of leading and providing effective direction for all F&B associates, salaried and hourly
