 The Ideal Candidate for this Position

>>IDEAL F&B DIRECTOR: Someone that has experience with complex luxury resorts, building and managing large F&B volumes, and can hire and build a talented team that is a cohesive unit.
>>IDEAL EXECUTIVE CHEF: Same experience as above that also has a track record for fine quality food and excellent plating and presentation skills.

 Scope of this Position

  • WE ARE ADVERTISING FOR A DIRECTOR OF FOOD & BEVERAGE AND AN EXECUTIVE CHEF.
  • >>THE RESORT
  • Rising from the cliffs along Southern California’s most scenic coastline comes Los Angeles’ only destination resort on the Pacific Ocean, opening June 2009. The first luxury oceanfront resort located on the magnificent Palos Verdes peninsula. The resort offers 582 guest rooms including 82 ownership villas and casitas, exceptional dining venues, three sparkling pools overlooking the Pacific, 25,000 sq. ft. spa with sweeping views of the Pacific, a nine-hole par 3 golf course, and 138,000 sq. ft. of meeting and event space. Fourteen acres of natural habitat ring the site, including two miles of public trails that wind through the site. The resort’s scallop-shaped point juts out into the sea allowing spectators a beautiful panoramic view and the occasional migrating whale sighting.
  • Must have experience at properties of similar size and quality.

 Job Requirements

  • Must be a citizen of this country or possess a valid work permit.
  • >>F&B DIRECTOR: CURRENT Food & Beverage Director at a LUXURY “multi-use” resort. (Independent preferred) MUST HAVE Experience with a Food & Beverage volume OVER $10 million. Degree preferred.
  • >>EXECUTIVE CHEF: CURRENT EC at 4/5 star resort (Independent preferred) with AT MINIMUM 3 outlets and a food & beverage volume EXCEEDING $10 million. Degree preferred. Independent restaurant experience in addition to resort experience preferred.

Technical Requirements:
  • Experience as Chef and in Front of the house.
  • Solid progression through F&B ranks.
  • Track record building outlet volume and average checks.
  • Experience with very busy banquet operations.
  • Experience implementing new F&B concepts.
  • Track record developing profitable F&B promotions.
  • Must be able to develop creative/innovative menus.
  • Current on latest technology applications for front and back of the house.
  • Experience developing, costing, pricing, and merchandising menus.
  • Establish and maintain proper inventories.
  • Pre-opening experience highly desired.
  • Excellent background in wines.
Leadership Requirements:
  • Ability to conceptualize the mission.
  • Provide leadership to position the property to achieve the mission.
  • Provide leadership to the departments to achieve their goals and objectives.
Managerial Requirements:
  • Clear, concise written and verbal communication skills.
  • Ability to sell concepts and ideas to management, peers, and employees.
  • Ability to clearly and concisely present technical subjects.
  • Track record promoting an atmosphere of teamwork.
  • Use a "hands-on" approach to management.
  • Abilities to inspire, train, and develop people for promotion.
  • Experience communicating, training, and managing multi-lingual staffs.
  • A mentor who has inspired, trained, and developed people for promotion.

  • Exceptional detail in follow-up.
