 Responsibilities for this Position

  • GENERAL PURPOSE:
  • The Sous Chef will provide exceptional customer service at the Sea Island Grill. The Sous Chef will be responsible for maintaining a clean and organized work station at all times.
  • ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Must be a strong communicator

  • Must be able to perform daily cleaning responsibilities
  • Must be organized
  • Must be well groomed and professional
  • Must be able to stand for long periods of time
  • Must be able to cooperate with other resort associates
  • Must show a desire for growth at the Sea Island Grill and at the resort
  • OTHER DUTIES/RESPONSIBILITIES:
  • Write weekly schedule by Tuesday of each week. This includes handling all schedule requests and changes.
  • Track approaching overtime throughout the week, and report any OT to the chef and or the restaurant manager by Thursday.
  • Conduct Monthly inventory of entire stock (with Chef Assistance) and weekly inventory of predetermined key items. Cross check this with the last inventory and note any significant changes.
  • In charge of all ordering and communicating that progress to the Chef. This includes periodic price comparison and vendor change decisions (ALL STAFF must provide a product needs list at the end of each sift
  • Write a daily cleaning check list for each station. Write weekly cleaning schedule for large and/or time consuming tasks. Ensure that these are followed.
  • Assist with submitting work orders to engineering
  • Responsible for inventorying and ordering all cleaning supplies.
  • Proper maintenance of all walk-in and reach-in coolers. Ensure all stock is being rotated, wrapped, labeled, and dated. Oversee the cleaning of all refrigeration units, and check that all expensive and sensitive items are remaining locked up in the cage.
  • Write a prep list for each station and ensure they are being used each day to promote accurate maintenance of mise en place and ordering.
  • Assemble and update the recipe book, and make sure the staff is using the recipes to provide consistent final products.
  • Work closely with Purchasing to establish, maintain, and update par levels to help ensure continued rotation of stock at commissary.
  • Responsible for helping Chef with disciplinary incidents when they arise. This will include communication with Human Resources and any necessary paper work. This may also involve suspension and or termination proceedings.
  • Required to attend weekly Leadership meeting and Food and Beverage Meeting
  • Will be asked to assist with checkbook entries and budget monitoring.
  • Engaged in employment search process. Including interviews, cooking demonstrations, hiring, and all necessary paperwork related to these responsibilities.
  • Reporting safety and security issues promptly and correctly
  • Know all emergency procedures
  • Associate is held accountable for all duties of this job.

  • EDUCATION OR FORMAL TRAINING:
  • High school diploma, GED, or the equivalent work experience required
  • Three years food and beverage experience preferred
  • While performing the duties of this job, the associate may experience temperature fluctuations, and moderate to high noise levels.
  • While performing the duties of this job the associate is regularly required to walk and stand.
  • The associate is occasionally required to climb and use balance.
  • Additionally, the associate will frequently be asked to use hands and arms to reach, carry, and lift items.
  • Specific vision abilities required by this job include close vision, distance vision, and peripheral vision.

  • Must live in the local area or within commuting distance.
